Abstract

The extension service in Louisiana offers nutrition education programs in schools across the state. We tested for change in nutrition knowledge among elementary school students based on 9 nutrition lessons delivered on various topics in nutrition during the school year using Turning Technologies audience response system. The enrichment classes varied from 20 minutes to 40 minutes in length. The students received informational fact sheets after the lessons and food tasting was conducted 50% of the time. We developed 10 pre and post test questions based on the lesson delivered to test students gain in nutrition knowledge. Pre and post test questions were delivered using Turning Point Student Response System software and the students used clickers to deliver the answers and the data was collected directly by the receiver. There were a total of 226 pre and posttests completed in six elementary schools. The students were enthusiastic about pre and post assessment and accepted the devices immediately. The results show that there was a highly significant gain in nutrition knowledge among the youth participating in the nutrition education programs (P<.0001) overall.
