Abstract
Rats of the Wistar CF strain were fed diets containing 70% of either fresh bread or bread treated with a mixture of ethylene oxide and carbon dioxide. No difference between the two groups was noted in the growth of three generations of young rats. The body-weight development in the adults was also similar. No histological changes were found in sections of liver and kidney from animals receiving these diets. Fertility did not appear to be affected by the diets. Periodic restrictions of food intake, which sometimes reveal a latent toxic effect, yielded the same results in animals fed treated or fresh bread. An unbalanced diet based on bread alone revealed, however, a slight difference between the two foods, the preserved bread lacking some accessory factor that was present in the fresh bread.
