Abstract

Results of fructose proton symport and nDNA/nDNA reassociation measurements in 58 wine and beer yeast strains belonging to the Saccharomyces sensu stricto group are presented. All strains were identified earlier using conventional physiological tests. Based on their fructose proton symport activity, four strains were found which did not correlate with their original classification, suggesting incorrect identification. The nDNA/nDNA reassociation measurements supported the results of the active fructose proton symport investigation.
