Abstract
The marama bean, which thrives in semi-desert climates, has the potential to provide a high protein supplement in areas of the world, where many crops will not grow. Nutritional studies are presented that suggest the marama bean contains an antinutritional factor, in addition to very high levels of antiproteinases. Five trypsin inhibitors on two elastase inhibitors have been identified to date.
