Abstract
Prooxidative effects of Cu2+-amino acid complexes on the autoxidation of linoleic acid (LA) were recognized in a 50% aqueous ethanol system (pH 7.0) at 35°C in the dark. Cu2+-amino acid complexes promoted both the autoxidation of LA and the decomposition of LAHPO in the following order: Cu2+-basic > Cu2+-neutral > Cu2+-acidic amino acid complexes. The prooxidative effects of Cu2+-basic amino acid complexes increased with an increase in the number of nitrogen atoms in the side chain of amino acid molecule: Cu2+-Arg > Cu2+-His > Cu2+-Lys complex. On the basis of the electrophoretical patterns of Cubammo acid complexes, it was concluded that Cu2+-basic amino acid complexes were positively charged, and Cu2+-acidic amino acid complexes were negatively charged at pH 7.0. The prooxidative effects of Cu2+-amino acid complexes on the autoxidation of LA may be ascribed to the electrostatic attraction between LA and Cu2+-amino acid complexes.
