Abstract

The intestinal-lysis and multi-probiotics microcapsule of L.lactis, L.plantarum and B.bifidum was produced with gelatin and chitosan as wall material by emulsified condensation method. The effects of temperature and the artificial simulation gastric and intestinal juices on the activity of probiotics were investigated. The experimental results show that the storage time of the bacteria was prolonged and the survival rates of the bacteria in the stomach and the intestine were increased by the formation of microcapsule to embed the bacteria, which can play a target action and reduce the production cost.
