Abstract

ABSTRACT The present study was conducted to evaluate the quality of milk sold in milk markets ( doodh mandi ) of Varanasi District, Uttar Pradesh. A total of 32 milk samples were collected from farmers/vendors coming to local milk mandi of Varanasi situated at Gadoulia for analysis of different physiochemical parameters, microbial quality, adulterants, preservatives and neutralizers. It was recorded that Harowan block reported highest mean value of specific gravity of milk sample as 1.030 and minimum value 1.025 from Pindra block and highest value of standard deviation from Kashi- Vidyapith block (±0.039) and minimum value (±0.014) from Baragaon block . Kashi- Vidyapith block reported highest mean value of fat 5.0 and minimum value 3.6 from Pindra block and high value of standard deviation from Kashi- Vidyapith (±1.56) and minimum value (±0.43) from Baragaon block. Baragaon block reported highest mean value of titratable acidity 0.128 and minimum value 0.116 from Arazi-line block and highest value of standard deviation (±0.013) from Baragaon block and minimum value (±0.006) from Arazi-line block. Total bacterial count and coliform count of the milk samples collected from Sevapuri were significantly (p<0.05) higher than those from Kashi-Vidyapeeth . Out of total, 9.38% and 6.25% samples were found positive for sugar and starch, respectively. Formalin was negative in all samples.
