Abstract
The occurrence and intensity of photon emission were observed to be closely related to the partial structures of flavonoids. Photon emission P is suggested to be given by [P] = k [X] [Y] [Z]. The photon constants k of catechins and gallic acid in the presence of hydrogen peroxide as X and acetalde-hyde as Z were calculated from k 1 k 2, and k 3 of [P] = k 1 [X] [Y] f (z), [P] = k 2 [Y] [Z] f (x), and [P] = k 3 [X] [Z] f (y). k 1 showed greater differences depending on the structure of catechins than k 2 and k 3. The XYZ photon emission system is thought to consist of the transformation of energy. From the results of analysis by high-pressure liquid chromatography (HPLC) or antioxidative effects against lipid autoxidation, the XYZ system is suggested to be a scavenging mechanism of active oxygen species. DDMP (2,3-dihydro-2,5-dihydroxy-6-methyl-4H-pyran-4-one) saponin from soybean showed as strong an effect as Z in the presence of hydrogen peroxide and phenolic compounds. The XYZ system suggests that natural radical scavengers have various combinations for synergistic inhibition of the radical reactions.
