Abstract

During the ripening of blue cheese prepared from milk intentionally contaminated by the tubercle bacillus, bacterial units appear which can be revived as chromogenic mycobacteria. This modification is similar to that obtained by the authors, in vitro, under different sets of experimental conditions.
