Abstract

The grain samples of thirteen tartary buckwheat varieties/genotypes were collected from Mountain Agriculture Research and Extension Centre (MAREC CSKHPKV, Palampur), Sangla Distt. Kinnaur Mean values of magnesium, phosphorus, calcium, zinc and iron evaluated in the grains of tartary buckwheat genotypes showed the range of variation from 194.5–216.5 mg/100g, 346.6 to 375.2 mg/100g, 49.2–57.6 mg/100g, 2.6–3.2 mg/100g and 3.5 to 4.2 mg/100g, respectively. Soluble protein content showed the significant variation from 9.8 to 11.3% in tartary buckwheat grains. Soluble protein further fractionated into albumins, globulins, glutelins, and prolamins based on their solubility in different solvents and showed the range of variation from 4.5 to 5.4%, 0.7 to1.2%, 2.1 to 2.5% and 1.5 to 2.0%, respectively.
