Abstract

This article describes the pathways involved in the anaerobic catabolism of carbohydrates by different bacteria, leading to the release of energy as well as the formation of various important fermentation products, such as organic acids and alcohols. The mechanism of uptake of substrates, the site of action, and other less prominent ways of energy metabolism are discussed briefly.
