Abstract

Lipid peroxide degradation by intestinal bacteria was investigated. Methyl linoleate hydroperoxide (MLHPO) with a peroxide value of 1000 mEq/kg, which was prepared by autoxidation of methyl linoleate, was added to modified M10 medium at a concentration of 2000 p.p.m. After inoculation of a test bacterium, incubation was carried out with shaking at 37°C for 4 days in an anaerobic atmosphere. The residual MLHPO was measured by the thiobarbituric acid (TBA) reaction. Of the 140 strains (52 species) tested, 25 strains (13 species) were capable of reducing TBA values which ranged from zero to 67 per cent.
