Abstract

Influence of water activity ( a w) on biosynthesis of polygalacturonase, d-xylanase and β-glucosidase in solid culture system of Trichoderma viride TS was studied. It was found that the production of enzymes was strongly affected by water activity of substrate and nature of a w depressor used. The polygalacturonase and d-xylanase production were maximized at a w = 0.995 whereas β-glucosidase formation was favored at a w = 0.96–0.98. The influence of water activity on catalytic effect of enzymes using sodium chloride, glycerol and sorbitol as a w depressor was also investigated. It was observed that sorbitol improved the thermal stability of polygalacturonase and d-xylanase.
