Introduction

Horseradish (Armoracia rusticana Gaertn., Mey. & Scherb.) is a hardy perennial that is member of the Brassicaceae family, and grown for its white, fleshy, and pungent roots, that are often used as condiment [1,2]. Horseradish is produced primarily in the United States and Europe, there is production in other countries to some extent including Canada, China, and South Africa. About 1,600ha of horseradish are produced in the United States, with Illinois being the largest producer with about 800ha [1,2]. The area just east of St. Louis, Missouri, USA (including Caseyville, Collinsville, and Edwardsville, Illinois) is considered the most concentrated horseradish production region in the world. Horseradish is a high value cash crop with the fresh product exceeding $20,000 per ha in Illinois, USA [2]. Horseradish is produced in several European countries including Austria, Czech Republic, Germany, Hungary, Poland, and Slovakia with about 3,000ha in total production
