Abstract

Date palm (Phoenix dactylifera L.) has gained increment in cultivation worldwide. An increase in cultivation has a direct and profound effect on date seed waste generation. This study aims to highlight the valorization potential of date seed waste by studying the fiber, sugar, and color profiles of 18 date seed varieties. The indigestibility of neutral detergent fiber (NDF) is higher among all varieties with a spectrum ranging from 37.70 ± 1.96 g to 49.22 ± 2.26 g. A similar trend was observed for the digested acid detergent fiber (ADF) analysis. However, lignin and hemicellulose values were found to be as low as 2.55 ± 1.27 g and 16.97 ± 0.53 g respectively. Color analysis was comparative alongside date paste of the same 18 varieties. The results depicted similar results with lightness (L) for both date seeds and paste. However, in comparison date seeds were more inclined towards the redness and yellowness spectrum. Sugar profile varied with each variety.
