Abstract
Food defense refers to the deliberate adulteration of food to cause harm. Intentional adulteration of food has a long history, and combined with the modern world's food distribution systems, an intentional adulteration event can have severe consequences. This article discusses the tools and risk mitigation strategies that can be used to address intentional adulteration of the food supply.
