Abstract
In this study, we developed and validated a three-dimensional fluorescence method for the determination of ethylenediamine tetraacetic acid disodium salt (EDTA-2Na) in pickles and canned mixed congee by forming a ternary fluorescent complex of zirconium-quercetin-EDTA. The complexation reaction conditions and fluorescence scanning parameters were optimized. During the fluorescent complexation reaction, reagent NH3 and anhydrous ethanol were used to enhance the fluorescence intensity. The analysis of EDTA-2Na by fluorescence scanning was accomplished within 3 min. Under these conditions, satisfactory linearities were obtained (R2 ≥ 0.99) with limit of detection (LOD) of 0.19 µg mL-1. The recoveries were 79.8–113.2%, with relative standard deviations (RSD) below 9.7%. The relative error of fluorescence compared with HPLC-DAD detection was less than 13.5%, indicating that the results of both methods were consistent. Thus, a convenient and accurate method was established to analyze EDTA-2Na in pickles and canned mixed congee, providing a new option to rapidly monitor EDTA-2Na in foods for ensuring food safety.
