Abstract

Cyclic voltammetry is a very important dynamic electrochemical technique because in a simple potential scan a lot of information can be retrieved from a system. This is the reason why it is considered as a diagnostic technique. A linear potential scan in both forward and backward directions at a fixed scan rate can indicate the presence of redox processes. Varying pH, scan rate, potential window, or concentrations provides valuable information to characterize processes in an easy way. This chapter includes a simple procedure to introduce students into one of the main techniques of dynamic electroanalysis. In this experiment, the antioxidant ascorbic acid (AA) is chosen as electroactive species, and its behavior is compared with the one of gallic acid. After observing the effect of the scan rate, interesting conclusions on the diffusional/adsorptive and reversible/irreversible nature of the process can be taken. Determination of AA in dietary supplements is finally performed.
