Extraction methods, including solvent and ultrasonic-assisted techniques, play a crucial role in obtaining concentrated tannins. Ellagic acid, abundant in plants like strawberries and grapes, garners attention for its health-promoting properties. Analytical methods such as spectrophotometry and chromatography, including HPLC, enable the precise identification and quantification of ellagic acid. These tools contribute to a deeper understanding of plant chemistry and its potential health implications. In a nutshell, tannins go beyond herbivore defence, influencing plant biology and human health.
