Abstract
Cassava peeling constitutes a major bottle-neck in cassava processing. The design, construction and development of a continuous-process mechanical peeler is described in this paper. The peeler consists basically of a cylindrical knife assembly and a solid cylinder, both mounted parallel and 20 mm apart on an inclined frame. The paper discusses the solution of various problems revealed by preliminary tests of the machine.
