Abstract
Tomatoes are an extremely versatile and healthy food. They are consumed raw in salads or as an ingredient in many different foods, sauces, soups, and juices. They contain high levels of vitamin C, carotene, and lycopene and are deemed to be very healthy. Tomatoes are canned in many different formats, from whole peeled and diced tomatoes, to tomatoes with onions and other vegetables or herbs, as well as pastes, purées, and sauces of various flavours. Tomatoes are very well preserved by canning, as their, color and overall quality remains very good given, good manufacturing practices.
