Publisher Summary The method of determination of ethanol is based on the reduction of diphosphopyridine nucleotide by ethanol in the presence of alcohol dehydrogenase. Several workers have applied the procedure for the determination of ethanol in blood. These workers used the crystalline horse liver alcohol dehydrogenase as the source of enzyme. The liver enzyme has a much higher affinity for ethanol than the yeast alcohol dehydrogenase s and is more suitable for the determination of small levels of ethanol. From 0.07 to 1.4 μmoles of ethanol can be estimated by this procedure.To determine blood ethanol the samples are distilled and then determined. The method can be used successfully to determine ethanol production in fermentations. Some higher aliphatic alcohols will also react, but at a slower rate. Methanol does not interfere with the ethanol analyses.
