Abstract

Abstract35Cl n.m.r. has been used for the first time to examine the interaction of chloride ions with muscle proteins in whole chicken muscle. The results show clear evidence of order in muscle proteins over the range 0.5 to 1.5 μm which is disrupted by polyphosphate but not by high concentrations of sodium chloride. It is concluded that chloride ions bind to the muscle proteins but do not cause a loss of order in them.
