Abstract

Konjac glucomannan is a major component obtained from the stem tuber of Konjac plant. It is a pseudoplastic fluid and majorly used as food additive in Asia continent. Konjac is also known as Amorphophallus that belongs to family Araceae. Glucomannan is extracted from Amorphophallus sp. It is the polysaccharide-based gel with high rate of compatibility. Because of its compatibility, harmless nature, and nontoxicity, it is widely used in chemical, medical, biological, pharmaceutical, and other fields too. Konjac has good amount of functional sugar named glucan. Besides this, it has many medicinal properties. For that reason microencapsulated structures are also known. It is composed of β–1,4 linked D–mannose and D–glucose. Glucomannan is extracted in many ways. Film-based technology is improved specially for glucomannan polysaccharide. This review mainly focusses on raw glucomannan extraction from Konjac tubers, which is common in use by many commercial industries. It also studies its structural properties, functions, and applications.
