Abstract
The major cereal grains – wheat, maize, and rice – undergo a series of stages between harvest and the food- or feed-processing plant, involving storage, overland transport, terminal storage and overseas shipment. At each transfer point, a document accompanies a grain consignment that pertains to its quality (class, purity, sanitation, and grade). Even at the First point of sale, known as receival, grain quality is viewed in terms of its export value. Each of the major grain exporting countries (Argentina, Australia, Canada, the European Union, and the United States) has developed quality standards. This chapter addresses these quality standards in the context of how a cereal lot is assessed at receival.
