Abstract

The article analyzes the features of the risk-based approach implemented in related standards of quality systems and recommended for use in food industry enterprises of the Russian Federation in food safety management systems. The article identifies the problem of the presence of hazards and risks in the process of ensuring food safety of consumers. The requirements for risk assessment in international standards are disclosed and their positional comparison with GOST R 51705.1-2001 is carried out, as well as the features of the risk assessment process of each standard are outlined. As a result of the study, it is proposed to use a tabular version of the main features of the standards under consideration for food industry enterprises, which will allow determining the choice of a specific standard for an enterprise, taking into account the specifics.
