Abstract

In this paper, it was investigated the dynamic characteristics of the reduction in the interfacial tension of sodium caseinate and chitosan at the interface with oil by the method of tensiometry (PAT-1). The features of the formation of mixed adsorption layers of emulsion stabilizers at liquid interfaces for use in encapsulation are investigated. The kinetics of lowering of the interfacial tension was studied, and the kinetic parameters of the formation of adsorption layers were calculated. It was established that the duration of the interfacial tension decrease was explained by slow diffusion of the macromolecular coil to the surface, conformational rearrangement of the static coils of macromolecules of the surface activity of the segments, which is reflected in the relaxation time value.
