Abstract

In this study, a profit maximization model is established by setting a representative peeled garlic processor. An empirical model is developed to estimate the market power exercised by these processors. The analysis results indicate that peeled garlic processors exercise market power when they are purchasing raw material and selling the processed products. The fact that peeled garlic processing companies exercise a market power suggests that they are exploiting a considerable amount of excess profits over marginal cost
