Abstract

The new method has been suggested for calculation of fleshy tissue residual cut. The method will give the possibility to determine these tissues content in bone skeleton depth. The method is based on determination of trypto- phan andhydroxyproline ratio in muscle tissue. It has been established by the new method that eviscerated broiler carcass with average mass 1467.97 g contains 75.89% of fleshy tissue together with abdominal fat and 23.44% of bones with an- atomic residual cut. 6.58% of residual cut can be received by preparation, and 1.72% can be received additionally with re- sidual cuts from bone depth, and its quantity can be determined by calculation. Thus we can receive in total 84.19% fleshy tissues, 15.14% bones without residual cut and 0.67% substandard raw material from eviscerated carcass.
