Abstract

Food microbiological safety is the main component of process of animal raw material processing. Appear- ance of available at the base of cetilpiridine chloride (CPC) gives the possibility to expand the range of reagents for chilled products decontamination and for its shelf-life prolongation. CPC has antimicrobial activity for gram-positive and gram- negative bacteria, fungi, yeasts and enveloped viruses. Experiments in ARSRIPPI have confirmed wide antimicrobial spec- trum of reagents at the base of CPC and the possibility of universal usage at different stages of poultry slaughtering and processing.
