Abstract

The purpose of this study is to determine the dependence of the relative biological value of dairy products on the mass fractions of fat, protein and sucrose in the base milk matrix using the test organisms Tetrahymena pyriformis. In the course of experimental work, the influence of methodological techniques, in particular the degree of dilution of samples on the results of test was established. Dilution of milk for testing to 0.15 mg nitrogen / ml ensured a sufficiently balanced intake of protein and fat by infusoria in all samples, which made it possible to reveal the effect of the ratio of their content on the growth of test organisms. The importance of determining the daily biomass increase, which indicates the nature of the influence of the test product on the development of the test culture throughout the entire cultivation process, as well as the morphology of cells, was confirmed.
